Rub chicken breasts with olive oil and place in the bottom of your slow cooker. Add all the remaining ingredients. Cook on high for 2-4 hours or low for 6 - until chicken is tender enough to shred.
Remove chicken to cutting board, let rest 5 min. Shred chicken. Return shredded chicken to slow cooker and let cook on low for additional 20-30 min. to absorb the liquid. Drain excess liquid before serving or use tongs to remove shredded chicken. Add hot sauce if you like it spicy!
