What We’re Watching
CHRISTA : Are you finished with Ozark? No spoilers here – but what did you think? If you already miss the Byrde family, then check out the Rayburn family on Netflix’s Bloodline. Another great family crime drama, this one set in the Florida Keys.
MEGAN : Winning Time: The Rise of the Lakers Dynasty (HBO Max). You guys I’m no sports junkie but this new series is great, I’ve been binging it all week! They use different filming techniques (or maybe it’s the editing?) and it gives the show an interesting view. Adam McKay is the producer (Succession anyone?). Check it out, even if you are not a b-ball fan there is so much more to the story, and the cast is two thumbs up. For those keeping score, they just got renewed for season 2!

Salsa Verde Honey Lime Chicken in the Crockpot, your Taco Tuesday just got a new superstar!
Salsa Verde Honey Lime Chicken

Equipment
- Slow cooker or Instapot
Ingredients
- 2 lbs boneless skinless chicken breast
- 1 tbsp olive oil
- 1 cup mild salsa verde
- 1/2 cup honey
- 1/2 cup lime juice
- 1.5 tsp chili powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1.5 tsp salt
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp black pepper
Instructions
- Rub chicken breasts with olive oil and place in the bottom of your slow cooker. Add all the remaining ingredients. Cook on high for 2-4 hours or low for 6 - until chicken is tender enough to shred.
- Remove chicken to cutting board, let rest 5 min. Shred chicken. Return shredded chicken to slow cooker and let cook on low for additional 20-30 min. to absorb the liquid. Drain excess liquid before serving or use tongs to remove shredded chicken. Add hot sauce if you like it spicy!
What We’re Planning
CHRISTA : We have our last college move-out happening in May. The schools are really helpful on move-in day with extra assistance and carts to carry loads of stuff…but when it’s time for move out, you’re usually on your own! Here are a few essentials we’re taking with us. (Pro tip: These are also helpful for move-in, too!) Megan and I have been through many move-ins and move-outs. If you need help or have questions, let us know. Would you like to see a post this summer about college move-in, dorm tips and/or first apartment essentials?
- A folding cart has been a lifesaver on many occasions. You can load this up with a few plastic bins/boxes and make fewer trips to your car.
- These Ziploc totes have been used on repeat for the last five years. (Thanks, Tammy, for recommending them years ago!) The jumbo size fits a few standard bed pillows or all the bedding. The XL size is perfect because, when it’s filled, it isn’t too heavy. I’ve had many moms stop me during move in/out to see where they could get these! And they hold up – we’ve been using the same totes since 2017.
- Don’t forget a few tools. My daughter has this toolkit in her apartment, but your son/daughter may not have any tools in their dorm room. The tools are helpful to take things apart so it all fits in your vehicle better. And the tool kit will last them well beyond college.
MEGAN : We are headed south for my son’s graduation next week. He has made an amazing group of friends at Clemson. One of the moms in the group organized the other moms and we are hosting a grad party for the boys. I wanted to do something special for the mothers of my son’s friends. Having a child graduate from college is kind of emotional (in a nostalgic way). I found these on Etsy and they are absolutely perfect. I can’t wait to give them next week!
What’s Inspiring Us
CHRISTA : We did a little “blog research” at Home Sense and Home Goods…and they were in full summer mode! (So many colorful finds – it was a little overwhelming for this online shopping girl!) If you haven’t been recently, then it’s time to go – grab a friend for lunch and have fun shopping! Here is a little inspiration for you as you’re preparing your outdoor space for another summer season. What’s on your shopping list for your deck or patio this year?

It’s slowly warming up and there’s a lot more green to be seen, and felt (ah-choooo!). Pro tip: Walking in nature with a friend is good for your body and soul.

Have those totes in my amazon cart…just trying to decide how many I need. Moving emily from dorm to apartment in August and a week later moving Josh into his first dorm. A bit much for this mom but I will make it. I would love to see your tips on moving into dorms and first apartments…I have moved Emily in and out many times but I’m sure there are some great tips to make it easier!
Wow – you’ll be a busy mom! Good luck with both moves. I have a lot of those totes after moving two kids – we’ve accumulated them over time. I’d start with a few of the bigger ones for all her bedding – one for pillows, one for comforter/blankets, one for throw pillows. The smaller ones are great for sweatshirts, towels/sheets, all the folded clothes. I also broke down and bought a bunch of these 66qt plastic bins from Target one year (https://www.target.com/p/sterilite-66qt-clearview-latch-box-clear-with-purple-latches–no-aasa/-/A-13794509) to pack in just because it was easier to store/stack everything once it came home (an investment but they last!).
