1lbsground turkey or 1 shredded rotisserie chicken
1/2onionchopped
1canHATCH chili green enchilada sauceI get this at Harris Teeter.
1cup shredded Mexican blend cheeseI use Tillamook.
8flour tortillas
Instructions
Cook onions and ground turkey in pan over medium heat on stove. (If using precooked rotisserie chicken, cook onions then add chicken)
Pour 3/4 can of enchilada sauce into the meat and stir, then add 1/2 Cup of the shredded cheese – when cheese is melted and combined remove from heat.
Spray a 9×12 pan with cooking spray.
Fill tortillas with the enchilada mixture, roll and line up in the pan.
Once all tortillas are filled and lined up in the pan pour the remaining sauce over them. Use fingers to make sure all are covered. Then sprinkle the remaining cheese over the top.
Cover and bake for 25-30 min at 350 degrees. Uncover for the last 10 min. Enjoy!
