This salad has gone viral on the inter webs. We had to see if the hype was worth it. I mean it's a salad??? But it's good friends, it's really good!

Ingredients

cup
quinoa or bulgar wheat
uncooked
2
cup
water
1
cup
cucumber
chopped
1/2
cup
parsley
chopped
1/2
cup
mint
chopped
1/3
cup
red onion
chopped
1/2
cup
roasted, salted pistachios
chopped
1
15 oz can
chick peas
rinsed and drained
2
lemons
juiced
1/4
cup
olive oil
sea salt and pepper
to taste
1/2
cup
crumbled feta
Instructions
Rinse and drain quinoa, put in pot with 2 cups of water and bring to a boil for 15 min. Once cooked drain any excess water.
In a large salad bowl add quinoa, cucumber, parsley, mint, onion, pistachios, chic peas.
Toss together. Squeeze lemons on over salad, add olive oil and salt and pepper. Stir in cheese last.
Notes
Serve the salad right away, would be perfect for a ladies lunch by the pool. If you have left overs, store in an airtight container for 5 days. Enjoy!
