This is a quick and easy fig jam, it is not "canned" or preserved so it should be eaten within a week or two.

Ingredients

lbs
green or purple figs, stemmed and cut into 1/2 inch pieces
1 1/2
cups
sugar
1/4
cup
fresh lemon juice
1/2
cup
water
optional
2
ripe peaches cut into 1/2 inch pieces
1
bunch
fresh rosemary
2
tbsp
vanilla
Instructions
run your jars through the dishwasher so they are freshly clean
gather your ingredients, wash and chop the fruit
toss figs/fruit with sugar in the pan you will boil them in and let sit 15 min.
add lemon juice and water and bring to a boil over medium high heat, stir until sugar is dissolved
simmer for 20 min. until desired thickness
spoon into jars and leave 1/4" space at top
close and cool to room temp and store in fridge
Notes
A few notes on serving:
spoon over goat cheese and serve with cheese
put on inside of grilled cheese sandwich
coat a pork loin and cook in the insta pot
serve on toastÂ
