Chocolate Zucchini Bread aka Chocolate Cake

Is your garden over producing zucchini like mine? This delicious zucchini cake is a wonderful break from the regular roasted veggies. Bonus: no one will know that there is zucchini in there unless you tell them!
Ingredients
- 4 eggs
- 2 cups sugar
- 1 1/2 cups olive oil
- 4 squares unsweetened chocolate
- 2 tspn vanilla
- 3 cups flour
- 1 1/2 tspn baking powder
- 1 tspn baking soda
- 1 tspn salt
- 3-4 cups grated raw zucchini
- 1 cup chopped walnuts optional
Instructions
- beat eggs until thick and light
- add sugar, oil, melted chocolate, vanilla - beat until well blended
- mix dry ingrediants
- add to chocolate mixture and blend well
- add zucchini and nuts and blend
- pour into 3 loaf pans or 1 bundt pan
- bake @ 350 for 1 hour
- dust with powdered sugar
