Ingredients

all purpose flour

baking powder

sugar
*if making dessert biscuits, sprinkle extra sugar on the tops.

*less if using salted butter

*cold! Irish butter is the best

whole milk
*cold
Instructions
mix dry ingredients in a bowl
add cold butter butter cut into small chunks
use pastry cutter or wooden spoon to mix until combined (there will be small chunks of butter and that's ok)
add milk and stir until shaggy
sprinkle extra flour on surface and fold dough out, press and fold over, press and fold over for layered biscuits
cover with saran wrap and let rest for 20 min
use a drinking glass to cut circles in dough, DO NOT TWIST this seals the edges and prevents the biscuits from popping up when cooking
put biscuits on a parchment lined cookie sheet
bake at 425 for 10-12 min.
