Healthy Eating in 2025

Anyone else making healthy eating a priority in January? The new year always motivates us to focus on eating better and improving our lifestyle habits. With the kids back at school we are cooking for two again. Time to replace all the sugary snacks and junk food with sliced apples and almond butter or a hand full of nuts . Pro tip: Send all the chips and cookies back to school with the kids.

Meal planning is key—when you set aside time to plan your meals, you’re more likely to stick to your health goals. Make a list of what meals you’re going to make on which days, print each recipe and paperclip to your meal plan. It makes grocery shopping so much easier and eliminates the need for mid week trips back to the market. Choosing nutritious, easy-to-prepare meals that prioritize lean proteins, like grilled chicken, salmon, or plant-based options like lentils and tofu, alongside a colorful array of vegetables (eat the rainbow!) dinners will be something that you look forward to.

What We’re Wearing

CHRISTA : It’s 20,000+ steps a day at Disney World, so I’m wearing my trusty Brooks Glycerin sneakers. I shared my favorite sneakers with you a few weeks ago (here), and this Disney trip put them to the test. I’m happy to report…no sore feet whatsoever!

MEGAN : January is all about getting cozy, nesting, cooking, cleaning out closets and organizing. The scuba suit from Banana Republic Factory is the perfect “house” uniform. CHRISTA : Here’s a fun and easy care package idea for your student (or a treat for your kid who’s just diving into adulting)! Target has these adorable mini piñatas in the party section for only $3. Pro tip: If your student has dormmates or apartment roommates, grab a bigger piñata and pack it with enough treats to share. Instant roomie bonding (and mom-of-the-year status)!

What We’re Watching

MEGAN : Man on the Inside (Netflix) is like TV comfort food. Ted Danson, a retired college professor, goes under cover in a senior living facility. Not only does he solve crimes but he discovers a whole new host of friends. Eight episodes, 30 minutes each.

CHRISTA : Yes, The Pitt (Max) is another medical drama, but what sets it apart is its raw, fast-paced portrayal of life in a bustling urban ER. Each episode takes viewers through one intense hour of the team’s relentless 15-hour shift. At times, you’ll feel like you’re watching a documentary. And I’m happy to see ER‘s Noah Wyle leading the cast (and admittedly that may be what initially drew me to the show!).


Random Stuff We Like

MEGAN : As empty nesters it’s important to start everyday with a healthy breakfast. These Starbucks Egg Bite dupes are amazing–ready in 30 minutes, packed with protein and DELISH! Having these in the fridge to grab on busy mornings makes life so much easier AND it’s much less likely that you’ll grab a donut. This is the silicone muffin pan I used–$12 and same day delivery from Walmart.

These delicious egg bites are the perfect Starbucks dupe. Perfect for mornings when you need to grab your breakfast and run out the door.
Prep Time 5 minutes
Cook Time 30 minutes
Course Breakfast
Servings 12

Equipment

  • 1 oven set to 350
  • 1 silicone muffin tray

Ingredients
  

  • 3 cups egg whites I used 1 1/2 cups egg whites and 6 whole eggs
  • 1 cup cottage cheese
  • 1 cup grated cheese I used gruyere, but mozzarella would be great too!
  • salt and pepper to taste
  • 1/2 cup diced red pepper roasted, sundried tomatoes, sausage, bacon would be great here too!
  • 1/2 cup chopped spinach
  • 1 pot boiling hot water
  • cooking spray

Instructions
 

  • Pre heat the oven to 350
    spray silicone muffin mold with non-stick spray
    finely chop pepper, spinach (and any other veg or meat) and put in bottom of the muffin cups
    in the blender (I used my vitamix) mix eggs, egg whites, cottage cheese and cheese.
    mix for 1-2 min. you want it really frothy – lots of bubbles
    pour batter into muffin cups, sprinkle with salt and pepper
    put muffin tray on a jelly roll pan in the oven
    once the pan is in the oven, pour the boiling water from your kettle into the jell roll pan, about 1/2 way up the side
    bake for 30 minutes

CHRISTA : If you’re not into cooking, you can still break the DoorDash habit and eat healthy with the Tovala Oven. It’s perfect for empty nesters, couples, or young adults.
