Don’t let those mushy bananas get you down! Whip up a bunch of this amazing banana bread. My family likes it when I add chocolate chips, but nuts are good too. I make four mini-loaves and freeze two so I have something homemade to serve when we have house guests OR if you are the house guest, it’s a perfect hostess gift.
Recipe for Megan’s Whole Wheat Brown Sugar Banana Bread

Equipment
- 1 9X5 loaf pan or 4 mini loaf pans
Ingredients
- 2 eggs
- 1/3 cup buttermilk I used reg. milk and added 2 Tbsp ACV and let rest on the counter until it got chunky
- 1/2 cup olive oil
- 2 or 3 mashed bananas
- 3/4 cup brown sugar
- 1 3/4 cup whole wheat flour
- 1 tspn baking soda
- 1/2 tspn salt
- 1 tspn vanilla
- 1/2 tspn all spice
- 1/2 tspn ground nutmeg
- optional: chopped pecans, chocolate chips
Instructions
- preheat oven to 325 degrees and coat pans with butter (or PAM)
- mix together eggs, buttermilk, oil and bananas
- add dry ingredients to wet: sugar, flour, baking soda, salt and spices
- add nuts and/or chocolate chips
- gently stir and mix well
- pour into baking pan(s)
- If doing small loaves bake for 50 min, if one large loaf it's 1h20m
