What We’re Watching and Listening To

CHRISTA : Six Feet Under (HBO) is definitely not a recent find (it aired from 2001-2005). I was thinking about this show because one of the lead actresses, Lauren Ambrose, also stars in Servant (Apple TV) that we’re watching. I LOVED Six Feet Under! It’s a family drama complicated by the fact that they live together in the funeral home they run, and they deal with death on a daily basis. Through some amazing storytelling (and dark humor) you’ll grow to love the Fisher family and all their quirks. I remember being so disappointed when this show came to an end, but feeling so satisfied with the series because the show has THE.BEST.FINALE of any show I’ve watched! (The final season has the highest Rotten Tomatoes score for the show.) There are five seasons which makes this a great binge – or load it on your iPad for your next trip.

MEGAN : The Adam Project (Netflix) was our family movie this week. Ryan Reynolds plays Adam, who exists in the year 2050. Adam crashes his space ship in his childhood backyard in 2022 and connects with his 12 year old self. Together they save the world and heal old wounds that they are suffering from. Great family movie, we all enjoyed it and it opens a few topics for discussion with the kids about moral compass, right and wrong etc. I don’t know how they found the kid that plays young Adam but he is great, he could absolutely be Ryan Reynolds. Jennifer Garner plays Adam’s mom and I always love her. Good for ages 10 and up (IMO).

Something for the Kitchen

CHRISTA : These three items make this breakfast muffin recipe (part of a low point Weight Watchers breakfast) extra easy to whip up:

  1. Silicone muffin pan : Love these for muffins. No need to use any non-stick spray because nothing sticks to them, and they’re easy to clean.
  2. One of these Tupperware freezer containers is the perfect size to freeze two muffins to enjoy later in the week.
  3. Pampered Chef scoop : these scoops come in three sizes, but I use the large one when making my muffins. The image below links to Amazon so you can see it, but you can buy it for less from a local Pampered Chef consultant (if you need one, try Paige – she also has a Facebook group with recipes and cooking tips!) and you’ll be supporting a small business.

MEGAN : Random kitchen gadgets used daily in the Thompson house.

  1. In the summer we have an herb garden, where I grow basil, lemon thyme, rosemary and sage. I have found that using a dedicated coffee grinder makes chopping the herbs efficient and easy. Don’t use your coffee grinder or you will have Starbucks flavored sage.
  2. We drink a lot of hot tea in our house, especially in the winter. This hot water kettle is fast and oddly satisfying to watch. My son also uses it for his afternoon ramen snack or mac n cheese. When it’s out on the counter it gets used!
  3. Every morning I scramble eggs and every morning I find myself searching for one tool – my silicone spatula. It’s a kitchen workhorse, from making the eggs to spreading peanut butter or cutting a sandwich in half – this one tool does many jobs.

What Megan’s Cooking

MEGAN : Grilling season is almost here and I’ve got a recipe that your whole family will like. My friend Nicole (who is an AMAZING cook) shared this with me years ago and it has been a Thompson family fav ever since. Send your husband outside to grill the steak and enjoy your dinner al fresco!

Nicole's Flank Steak Salad with Roasted Shallots and Goat Cheese

Delicious steak salad for a quick week night dinner.

Course Main Course

Equipment

  • Grill or Broil in oven
  • Blender

Ingredients

  • 1 cup olive oil
  • 5 tbsp red wine vinegar
  • 2 tbsp fresh thyme
  • 2 garlic cloves
  • 1 1/2 lbs flank steak
  • 18 large shallots peeled and halved
  • 8 cups mixed salad greens my family likes romaine
  • 1 cup fresh goat cheese crumbled

Instructions

  • Blend oil, vinegar thyme and garlic in blender until garlic is chopped; season dressing with salt and pepper
  • Place steak in a 13x9x2 inch glass baking dish. Pour 1/3 cup of dressing over and turn to coat. Cover and chill for 30 min. Pro tip: can be made up to 4 hours ahead - if chilling steak longer than 30 min be sure to bring back to room temp before grilling
  • Preheat the oven to 450. Toss shallots in 2 tablespoons of dressing and put on baking sheet. Roast shallots until caramelized and tender stirring occasionally, about 20 min. Set aside.
  • If grilling outside, heat up the grill now OR preheat the oven on broil. Cook steak to desired doneness, about 4 min per side for medium rare. Let steak rest 5 min, thinly slice across the grain on diagonal.
  • Place greens and shallots in a large shallow bowl; toss with enough dressing to coat. Place steak in the middle, sprinkle with goat cheese. Pass any remaining dressing when you serve.
  • Enjoy your summer steak night supper!

What We’re Shopping For

CHRISTA : I love this vase that my daughter gave me. It comes in six colors – white, black, red (on sale), navy, light blue and green. Just a head’s up – it’s big, so you’ll need lots of flowers to fill it. I can’t wait to add a bunch of purple hydrangea that grow in our backyard in late summer. When I’m not using fresh flowers, I ordered these tulips on Amazon to keep it filled this spring. (You’ll need two sets of flowers to fill the vase.) I looked for similar vases that might be a little less expensive and couldn’t find one anywhere. I did find this one, and if I were crafty I’d be on Pinterest learning how to paint the bottom myself! And in case you missed it, these eucalyptus stems from Amazon are in a vase in my foyer and family room – another simple decorating idea.

MEGAN : Have you noticed all the stylish women wearing white leather sneakers with a slight platform? I’ve been crushing on them for a while and finally broke down and ordered a pair, jeez there were a lot of choices! I started with this pair as my inspiration, but $580 was out of my price range. Here are a few that I found worthy of sharing with you all. ECCO makes a cute and similar pair, but no platform. You can never go wrong with a classic like Stan Smiths. But I settled on these by Steve Madden. They have the slight platform and a very similar look. I’ll let you know about comfort as soon as they arrive!

Something You Need (Trust Us!)

CHRISTA : You need a Scout bag! The Original Delano is my favorite one. It’s perfect for the pool, beach, road trips, your picnic for your outdoor concert, weekend college visits when your daughter needs you to bring a “few” things (LOL!). It holds a lot, folds for storage, is easy to clean, and is well-made. Trust me, you will love having a tote like this. I also have one of these Errand Boy totes to make my trips to UPS easier when I have a “few” returns. You could also use this tote to take clothes to the dry cleaners. And I also shared this market tote by Scout on Instagram. I keep them in my car for shopping because they’re better than plastic (and look cute, too).

What We’re Organizing

CHRISTA : I am a list maker…for everything! It helps me stay organized and less forgetful. I thought it would be fun to share some of my lists with you – they definitely make my life a little easier. Here’s a list I always use when I’m packing for a warm destination vacation (where most of our vacations are) – thought this might be helpful with spring break upon us. Am I forgetting anything?

Would you like to see more lists in future posts?

What We’re Wearing

CHRISTA : DSW for the win this week. I have tried Rothy’s flats many times and they just don’t seem to work for me. But I found these very similar shoes by Kelly & Katie at DSW. (To compare, here are the Rothy’s in black.) In addition to the black, these come in navy, gold and green. The knit fabric is very soft and there is some cushion in the footbed. They fit well, are actually really comfortable and are much cheaper than the Rothy’s. They’re even made from recycled post-consumer plastic bottles like Rothy’s. Fit tip: I sized up.

MEGAN : Now that we are starting to see a few warmer days in Virginia I’ve been wearing my utility jacket non-stop. It’s the perfect layering piece with denim. This weeks “mom on the go” uniform is jeans, white tee shirt, gray cashmere crew neck sweater, utility jacket and a scarf (similar). I can peel the layers on or off as mother nature regulates the March temps.

Just ordered the spatulas. Anything that cuts a pnb sandwich gets high marks at our house. Didn’t go for the electric kettle that makes mac n cheese, but I’m totally impressed with something that can make both a cup of tea and a mac n cheese. Great ideas, ladies!
