Crock Pot Butter Chicken (gf,df,paleo & whole 30)

Equipment
- 1 crock pot
Ingredients
- 1 lbs boneless, skinless breasts I used thighs
- 1 med onion, diced
- 2 tsp coconut oil (or ghee)
- 4 cloves garlic, finely minced
- 1 tsp minced ginger
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp cardamom
- 1/2 tsp salt
- 1/2 tsp cayenne (optional)
- 1 can full fat coconut milk
- 1 6 0z can tomato paste
- juice of 1 lime
- 1/4 cup chopped cilantro
Instructions
- In a medium pan heat coconut oil over medium heat
- add onion and saute until soft, add garlic, ginger, spices and salt. Cook 1 min.
- Stir in coconut milk and tomato paste until combined
- Place chicken in slow cooker
- Pour sauce over chicken
- Cook on high for 3-4h or low 6-8h
- Once finished shred or dice chicken in the sauce. Squeeze lime juice and top with cilantro
