Crock Pot Butter Chicken

Getting a healthy dinner on the table on a busy school night with sports practices, play practice, Boy Scouts and all the activities is hard. This crock pot butter chicken is so yummy, fast and EASY! You’ll want to put it in your regular rotation.

This chicken recipe is so easy, you toss it in the crock pot and forget about it. Serve it over rice (the sauce is the best part!), with naan, shred the meat for tacos, quesadillas or on a salad! Quick and easy for a busy school night with sports practices or Halloween!

Equipment

  • 1 crock pot

Ingredients
  

  • 1 lbs boneless, skinless breasts I used thighs
  • 1 med onion, diced
  • 2 tsp coconut oil (or ghee)
  • 4 cloves garlic, finely minced
  • 1 tsp minced ginger
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp cardamom
  • 1/2 tsp salt
  • 1/2 tsp cayenne (optional)
  • 1 can full fat coconut milk
  • 1 6 0z can tomato paste
  • juice of 1 lime
  • 1/4 cup chopped cilantro

Instructions
 

  • In a medium pan heat coconut oil over medium heat
  • add onion and saute until soft, add garlic, ginger, spices and salt. Cook 1 min.
  • Stir in coconut milk and tomato paste until combined
  • Place chicken in slow cooker
  • Pour sauce over chicken
  • Cook on high for 3-4h or low 6-8h
  • Once finished shred or dice chicken in the sauce. Squeeze lime juice and top with cilantro
